Baked Dijon Salmon

This is a wonderful way to prepare fresh salmon fillets in the oven. Be sure to make extra because your family will be begging for more!

¼ cup melted butter or oil
3 tablespoons Dijon mustard
1½ tablespoons honey
¼ cup dry bread crumbs
¼ cup finely chopped pecans
4 teaspoons finely chopped parsley or parsley flakes
4 4-oz. salmon fillets

1. Preheat oven to 400°F.
2. In a small bowl, combine butter, mustard, and honey, and set aside. In another bowl, mix bread crumbs, pecans, and parsley.
3. Brush each salmon fillet lightly with honey-mustard mixture; then sprinkle with bread-crumb mixture.
4. Cook salmon for 12 to 15 minutes in preheated oven, or until it flakes easily with a fork. Season with salt and pepper. Serve with green beans.

Yield: 4 servings
