Snack Smarter // Watermelon Mint Popsicles

Yield 10

Red layer:

4 cups cubed watermelon

White layer:

1 (5-oz.) container vanilla yogurt

Green layer:

½ cup green grapes, seedless

½ cup frozen pineapple chunks

½ cup spinach leaves

10 mint leaves

¼ cup water

½ cup ice

In a blender, combine the bananas, milk, and ice, blending until smooth.

Prepare the red layer: In a blender, purée the watermelon until smooth and pour into a Popsicle mold, filling each cavity  of the way. Insert Popsicle sticks and freeze for at least 2 hours.

Prepare the white layer: Add about ½ inch of yogurt to each Popsicle, smoothing it into an even layer with the back of a small spoon. Try to wipe any yogurt above the ½ inch to create a distinct layer (see tip).

To prepare the green layer: In a blender, purée the grapes, pineapple, spinach, mint, water, and ice until smooth. Pour into the remaining space in the cavities of the Popsicle mold and freeze for another 1–2 hours, until firm.

Tip: Piping the yogurt into the Popsicle molds makes it easier to create a distinct white layer. Add the yogurt to a pastry bag or a disposable plastic bag with one corner snipped off.
