Quick Chicken & Peppers

Serves 4–6

1 pack frozen diced peppers
3 cubes frozen garlic
Olive oil, to drizzle
Salt and pepper, to taste
4–6 dark chicken cutlets

 

Preheat oven to 350°F.
In a bowl, toss peppers with garlic, oil, salt, and pepper. Scoop half into a 9×13-inch dish.
Season both sides of the cutlets with salt and pepper. Place cutlets in the dish and top with remaining peppers.
Bake covered for 2 hours.
