Apple Roasted Chicken
This dish is on the menu in my house every week. It takes little time to prep and the results are consistently delicious, even the next day warmed up. A friend recently told me about this naturally sweetened apricot preserves that has no added sugar and it’s truly delicious!
5 chicken thighs, skin-on and
¼ cup apple juice, organic and
¼ teaspoon paprika
¼ teaspoon garlic powder
¼ teaspoon onion powder
⅛ teaspoon salt
⅛ teaspoon black pepper
3 tablespoons apricot preserves*
Olive oil spray
1. Preheat oven to 350°F. Place chicken in a baking pan. Pour apple juice into the bottom of the pan.
2. Sprinkle paprika, garlic powder, onion powder, salt and pepper over chicken. Spread apricot preserves over each piece and finish with a light spray or drizzle of olive oil until lightly coated.
3. Cook uncovered for 30 minutes. Turn chicken over and baste with the juices from the pan. Sprinkle with additional spices if desired. Cook for an additional 30 minutes until golden.
4. Garnish with mini apples and sage leaves.
