Crush the pecans by placing them in a Ziploc bag and pounding. You can also pulse in your food processor, but don’t crush too finely as you want to have some bigger chunks.

4 (1½-inch wide) salmon fillets
Garlic powder, for sprinkling
3 tablespoons honey
3 tablespoons mustard
1 cup light mayonnaise
8-10 ounces honey-glazed pecans, crushed

  1. Preheat oven to 350ºF. Rinse and place the salmon slices in a baking dish.
  2. Lightly sprinkle each slice with garlic powder.
  3. In a small bowl, combine honey, mustard, and mayonnaise. Smear that mixture onto each piece of salmon, then coat each piece liberally with the honey glazed crushed pecans.
  4. Bake uncovered for 25-30 minutes. Be careful not to overbake, or salmon will be dry.
