I love a fresh, crisp salad. But sometimes adding a flavorful dressing
means it’s not a healthy choice anymore. Not this time! This Caesar
Salad will satisfy your creamy dressing craving without undoing your


12 oz (1½ heads or bags) chopped Romaine lettuce
3 Tbsp Parmesan cheese
3 Tbsp croutons (optional)

Light Caesar Dressing:
¼ cup light mayonnaise
2 Tbsp water
2 Tbsp lemon juice
2 Tbsp white wine vinegar
1 garlic clove, crushed
½ tsp Dijon mustard
¼ tsp Worcestershire sauce
½ tsp salt
pinch coarse black pepper

1. Prepare the dressing: In a bowl, whisk together mayonnaise, water, lemon juice, vinegar, garlic, mustard, Worcestershire sauce, salt, and pepper until smooth.

2. Toss lettuce with dressing, croutons (if using), and Parmesan; serve.
