Raw Beet and Apple Salad

I tasted a salad with beets and apples and loved it so much that I started making my own. I added celery and walnuts for added flavor and crunch. I want to inspire people to use fresh, raw beets. You don’t need to cook them or anything!

For the Salad:
1–2 beets, peeled and grated
2 green apples, grated
1–2 stalks celery, chopped
Chopped walnuts (optional)

For the Dressing:
2 teaspoons silan (date honey)
Lemon juice
1–2 tablespoons balsamic vinegar
Sea salt

  1. Put all the salad ingredients in a large bowl, and toss to combine.
  2. In a separate bowl, whisk together the silan, lemon juice to taste, balsamic vinegar, and salt. Pour over the salad and toss again.

 

Yield: serves 4 to 6
