Food Can Heal // Homemade Elderberry Syrup

Yield: 1–2 cups

1 cup organic dried elderberries
3½ cups water
¾ cup raw honey
1 star anise

In a medium-sized saucepan over medium heat, cook dried elderberries and water for 1 hour, reducing it by half. Let cool completely.
Strain the syrup into a bowl, pressing the juice out of the berries with a wooden spoon and discarding the star anise. (You can also squeeze the berries through a nut milk bag.)
Gently stir in the raw honey and pour into glass jars. Store in the fridge for up to 3 weeks.

Dosage: 1 tablespoon, 3–4 times a day
