Loaded Cauliflower

When creating this menu I knew I wanted to include a dish
that is ridiculously easy and ridiculously delicious. Here you have it: Throw
these store-bought ingredients together for an amazing side.

Yield: 12 servings

2 lbs. (32 oz.) breaded cauliflower

½–1 lb. pastrami, cut in small pieces (optional)

1 cup barbecue sauce

½ cup garlic mayo

½ cup bottled lemon-garlic dressing (such as Saladmate)

1 cup store-bought salsa

1. Preheat oven to 400°F. Line a baking sheet with parchment paper. 

2. Spread cauliflower and pastrami (if using) on the baking sheet.

3. Cook 25 minutes, flip cauliflower and pastrami, and pour barbecue sauce on top. Drizzle with garlic mayo and lemon-garlic dressing and cook another 10 minutes.

4. Remove from oven and cool for a few minutes. Serve with salsa on the side.

Variation: For a broccoli version of this dish, use 2 lbs. breaded broccoli instead of breaded cauliflower.
