Vanilla Spiced Cider

by Yossi and Malky Levine

Yes, it is worth going that extra mile for the nutmeg seeds and vanilla bean! Quality spices are key to enrich the flavors of your cider. I bought these at the shuk, but you can buy them at any local grocery store.

5 Golden Delicious apples, sliced
1 cinnamon stick
2 nutmeg seeds
½ cup honey
1 vanilla bean, split and scraped

1. Place apples, cinnamon stick, and nutmeg in a Wrap ‘n Boil bag.
2. In a large saucepan over high heat, heat 5 cups water, honey, and vanilla bean along with Wrap ‘n Boil bag. Alternatively, add all ingredients directly to pot and strain when done. Bring to a boil, then reduce heat to low and simmer for 1 hour.
3. Remove bag and squeeze as much liquid as you can back into the pot. Serve warm.

Yield: 6 servings
