Strawberry Mango Daiquiri

We don’t think we need to convince you that a combination of freshly pureed mango and crushed strawberries makes for an amazing mix! The Popsicle, aside from its beautiful presentation, is also refreshing and delicious.

2 cups mango puree
3 cups fresh or Bodek
Frozen Strawberries,
blended coarsely
Juice of ½ lemon
1 cup mango juice
½ cup simple syrup
1 cup vodka

To Serve
Simple syrup
Lemon zest
Strawberry/berry Popsicle
Fresh mint leaves

1. Combine mango puree, strawberry puree, lemon juice, mango juice, simple syrup and vodka in a large pitcher and stir to combine.
2. Fill three separate flat plates with simple syrup, sugar, and lemon zest. Dip the rim of each glass into simple syrup, then sugar, and then the lemon zest. Pour cocktail into the glass, leaving some room before the sugar rim. Place a Popsicle into the drink and top with fresh mint.
Yield: 6 servings
