10 ounces baby kale or 16 ounces romaine lettuce
1 English cucumber, diced
¼ cup Craisins
½ red onion, diced
8 ounces fresh mushrooms, sliced

Celery Dressing
3 celery stalks
1 small onion
1 cup oil
½ cup vinegar
½ cup sugar
2 teaspoons mustard
1½ teaspoons salt
⅛ teaspoon pepper

  1. In a bowl, combine all salad ingredients.
  2. Blend dressing ingredients together in a blender (it doesn’t have to be smooth; leave some celery texture). Toss with salad (you won’t need all of it) and serve.

 

Yield: 8 servings
