I think that if I had to vote on my favorite pie, it would be a lemon meringue. I love the sweet yet tart flavor and creamy curd consistency. And though I love that pie, it’s a long process to prepare one. This pie is a great look-alike, but much easier to prepare.  It’s not quite as tart, thanks to the other citrus, but it is so perfect for that citrus craving.

¾ cup sugar
3 tablespoons cornstarch
½ cup lemon juice
½ cup orange juice
½ cup grapefruit juice
3 egg yolks
1-2 tablespoons Crisco
1 graham cracker crust
Citrus wedges from oranges and grapefruits

  1. In a saucepan, combine sugar and cornstarch. Add citrus juices and cook until mixture thickens and bubbles.
  2. Whisk egg yolks in a bowl. Slowly add in the hot mixture, whisking quickly to temper. Return mixture to the pot and whisk vigorously until it returns to a boil, about 2 minutes. Add Crisco and whisk until it melts. Pour into pie crust.
  3. Place citrus wedges on a paper towel to dry them out as much as possible. When ready to serve, place wedges on top of custard to decorate (as close to serving time as possible).

 

Yield: 1 pie
