This is a wonderful light salad, and an easy way to make a great maple dressing.

Salad
1 large Granny Smith apple, sliced
1 red onion, sliced
1 cup sliced hearts of palm
6 cups baby spinach, cleaned and checked
1 red bell pepper, julienned
¼ cup slivered toasted almondsDressing
4 tablespoons pure maple syrup
⅓ cup white vinegar
¼ cup canola oil
salt and pepper to taste

  1. Mix all the salad ingredients together in a large bowl.
  2. In a small jar or cruet, whisk together all the dressing ingredients.
  3. Drizzle dressing over the salad.
  4. Toss and serve.

Yield: 6 to 8 servings

PLATE: This salad can be served in a big bowl or plated individually with the sliced ingredients placed on top of the greens and the dressing drizzled over the salad.
