Dough
1 tablespoon active dry yeast
1 cup warm water
1 cup plus 1 teaspoon sugar, divided
1 cup oil
2 eggs
½ teaspoon salt
1 cup orange juice
8 cups flour

Filling
¾ cup sugar
¾ cup brown sugar
2 tablespoons cinnamonGlaze
1 cup confectioners’ sugar
¼ teaspoon vanilla sugar
2 teaspoons boiling water
1 teaspoon oil

  1. Prepare the dough. In a small bowl, combine yeast, water, and 1 teaspoon sugar. Let sit for 10 minutes.
  2. In a mixer bowl, combine 1 cup sugar and oil, and mix. Add eggs one at a time, beating well after each addition. Add salt and orange juice. Add flour and mix. Add yeast mixture and mix. (If dough is sticky, you can add more flour and oil.)
  3. Place dough in a lightly oiled bowl, cover, and let rise in a warm place for two hours.
  4. Prepare the filling. Combine all ingredients.
  5. Divide dough into four balls. Roll each ball into a large thin triangle. Generously spread oil over rolled-out dough and sprinkle with cinnamon mix. Starting from the wide side, roll up tightly. Slice and place on baking sheet. Cover and let rise for another 30 minutes.
  6. Meanwhile, preheat oven to 350°F. Bake for approximately 25 minutes or until golden brown. For really soft buns, do not overbake!
  7. Meanwhile, prepare the glaze. Whisk together all ingredients. Let cool and drizzle with glaze.

 

Yield: 48 mini-buns
