I developed this recipe one day when I was in the mood for caramel (just not in the mood to make it from scratch). I wanted a dessert that was easy and perfectly gooey, and this is the result.

Apple Dumplings in Caramel Sauce:
12 mini pizza rounds (such as Mazor’s or Yitzy’s)
2 apples, peeled and thinly sliced (I recommend Cortland)
1 tablespoon oil
¼ cup sugar
¼ cup brown sugar
½ teaspoon vanilla
¼ teaspoon cinnamon
¼ cup quick-cooking oats
¼ cup boiling water

For Serving:
vanilla ice cream
caramel sauce

  1. Preheat the oven to 350ºF.
  2. Place 3-4 apple slices on each pizza dough and fold to form a dumpling shape. Place in a greased baking pan.
  3. Combine oil, sugars, vanilla, cinnamon, and oats. Spread around dumplings (not too much on top). Pour boiling water in the middle and around the edges (not over the dumplings). Bake for 35-45 minutes, until dumplings are golden brown. Serve warm with ice cream and drizzle with caramel.

 

Yield: 12 desserts
