Thousand Island Rotini Salad

Because this pasta is so easy (don’t tell anyone what the ingredients really are!), I prepare it very often, sometimes for family simchos and shalosh seudos. We’re always left with an empty dish.
1 pound rotini pasta
1 tablespoon vinegar
2 tablespoons olive oil
1 tablespoon fresh minced basil
2 garlic cloves, crushed
1/4 cup ketchup
2 cups Thousand Island dressing
1. Prepare pasta according to package instructions. Drain and rinse under cold water.
2. In a large bowl, combine vinegar, olive oil, basil, garlic, ketchup, and Thousand Island dressing. Toss with pasta. The pasta can be served either warm or cold.
Yield: serves 6
This pasta can be made ahead of time and works well as a shalosh seudos dish.
