Think of the Facon as a protein-based crouton, crisp and salty!

5 ounces baby arugula
6 radishes
4 ounces Facon or beef fry meat, fried, and cut into strips

Dressing:
2½ tablespoons pure maple syrup
2 tablespoons apple cider vinegar
1 tablespoon white vinegar
1 tablespoon olive oil
⅛ teaspoon salt
dash black pepper

  1. Using a mandolin or peeler, shave the radishes.
  2. In a large bowl, combine radishes and arugula. In a separate bowl, whisk together dressing ingredients.
  3. Toss salad with maple cider dressing and top with Facon strips.

 

Yield: 4 servings
