The toothpick tends to get discolored during baking. Try using a simple wooden toothpick for baking and replacing it with a decorative toothpick for serving.

4 large, skinless trout or sea bream fillets
½ cup walnuts, coarsely chopped
1 tablespoon maple syrup

For the Seasoning
3 tablespoons oil
½ teaspoon smoked paprika or sweet paprika
2 tablespoons soy sauce
2 garlic cloves, crushed
½ teaspoon salt

  1. Cut each fish fillet in half lengthwise.
  2. Combine all the seasoning ingredients in a small bowl and spread over the fish.
  3. Roll up each piece jelly-roll style and close with a toothpick. Bake for 10 minutes at 400°F (200°C).
  4. Remove the fish rolls from the oven and sprinkle with chopped walnuts and maple syrup. Return to the oven and bake from 3 more minutes. This dish is best kept warm on the blech.
