Grilled Peaches with Brown Sugar Pecan Crumble

4 peaches, halved
2 tablespoons light brown sugar
½ teaspoon cinnamon

Crumble
2 tablespoons light brown sugar
2 tablespoons unsweetened coconut flakes
¼ cup finely chopped pecans

  1. Preheat oven to 400°F.
  2. Place peach halves in a baking dish. Spray with nonstick cooking spray and sprinkle with brown sugar and cinnamon. Then place face down and bake for 20 minutes.
  3. Meanwhile, prepare the crumble: Combine brown sugar, coconut flakes, and chopped pecans.
  4. Remove peaches from oven. Turn cut side up and top with crumble.
  5. You can serve this hot, warm, or at room temperature, with or without ice cream. If serving with ice cream, add some crumble on top of the ice cream, too!

Yield: 4 to 8 servings

Here is a fantastic and easy way to end off your meal! It can be served with ice cream, or without, for a lighter, healthier version.
