Fresh Fruit and Yogurt Parfaits with Crunchy Granola

These parfaits are the perfect thing to top off a great party! You’ve tasted and eaten your fair share of food from the buffet. Now you’re craving something sweet…but not too heavy. These light, fresh fruit and yogurt parfaits will do the trick and won’t derail your diet.

½ pineapple, finely diced
2 cups blueberries
2 mangos, finely diced
2 cups strawberries, sliced thinly
3 cups light vanilla Greek yogurt
1½ tablespoons maple syrup

Oil-Free Granola
¾ cup brown sugar
¼ cup hot water
2 teaspoons vanilla
dash salt
4 cups rolled oats
1 cup chopped pecans or walnuts
  1. Preheat oven to 400°F.
  2. In a bowl, combine bread crumbs, Parmesan, and spices. Beat egg in a second bowl, and place flour on a plate.
  3. Bread the fish: Dip it in flour, then in egg, then in bread-crumb mixture.
  4. Heat oil in a frying pan. Add fish and cook for 2½ minutes per side. Transfer to oven and bake for an additional 2½ minutes.

Yield: approximately 8 parfaits (depending on the size of the glass)
